Best Day Ever

I stole the post title from a SpongeBob song. Should I admit that? But it is a good day.

Exhibit A.
I get out of the shower and Jacob is playing a new game, which he has dubbed "Clean Up." Serious, he says he has to get all the evil dust bunnies. What? Who took my child? But, not to look a gift horse in the mouth, I tell him not to forget about the Evil Enemy Called Clutter.

Exhibit B.
Maggie and Dillon come over for a day of scrapping, mixed in with a little Cinco De Mayo fajitas and margaritas. Now, I should point out that having Dillon with her really is a good thing. He is the entertainment for Jacob. I am at one layout and three cards so far, with three hours left to the day.


Exhibit C.
Sopapillas... little pocket of fried dough goodness, sprinkled with powdered sugar and oozing honey. I have always wanted to make them and now I know how. Here is the recipe:

INGREDIENTS
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
3/4 cup water
2 cups vegetable oil for frying

DIRECTIONS
In a large bowl, sift together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Using hands, mix in water to make a smooth dough. Knead lightly on a floured surface. Cut dough into 12 pieces, and shape into round balls. Cover, and set aside.
Heat oil in deep-fryer to 375 degrees F (190 degrees C). Jen's Note: the heat is crucial to the puffy goodness. Too hot and your house will smoke up. Just saying, is all.

On a lightly floured surface, roll dough into thin circles. Cut each circle into triangles. Fry in hot oil, until golden brown, turning when dough puffs. Remove, and drain well on paper towels.

I have to admit the sopapillas don't sound that appetizing to me but that margarita is looking delish. Sounds like a fun day!
